Yes this black bean quesarito is a Taco Bell copycat! Because who doesn’t want to make a bean burrito out of a cheese quesadilla?! It just makes sense and turns out it’s totally delicious, incredibly easy, and a really (really!) filling meal. I used my refried black beans for the bean layer in this quesarito, but I also share some shortcut options if you don’t want to make them from scratch.

If you’re wondering wtf is a quesarito, you are not alone! This Taco Bell menu item is a mash up between a quesadilla and a burrito. So essentially you make a quesadilla and then turn it into a burrito. YUP!

Quesarito Ingredients

You’ll need just 6 basic ingredients to make these at home and we’re using some smart shortcuts as well:

  • Tortillas – Look for a burrito size flour tortilla so you have enough room to add burrito fillings. The thinner the better for easier rolling!
  • Shredded cheese – Use a shredded cheddar cheese, or another cheese that melts well like queso Oaxaca or queso asadero.
  • Black beans – You have options! I highly recommend my refried black beans but you can also use canned black refried beans, your favorite refried beans, or just regular black beans like the Taco Bell version.
  • Spanish rice – I prefer to use a shortcut, microwavable Spanish rice but you could also make it from scratch or even make a cheater version by stirring some salsa into cooked rice. Not exactly the same, but is a good option.
  • Queso blanco or chipotle sauce – There are a ton of queso options – so choose your favorite and spice level accordingly. The Taco Bell version is made with a creamy chipotle sauce.
  • Sour cream – Use your favorite sour cream or skip it if you prefer. There is a lot going on in these copycat Taco Bell black bean quesarito so I don’t think it’s going to make a HUGE difference if you would rather skip it or don’t have any.

How to Make a Black Bean Quesarito

Let’s make this homemade quesarito! This is a high-level overview, the exact directions can be found in the recipe card below.

  • Heat components. Heat refried beans, heat rice, and heat nacho cheese according to package instructions and/or until hot.
  • Make quesadillas. Sprinkle cheese on one tortilla and cover with another tortilla. Microwave until cheese melts.
  • Assemble burritos. Spread beans over bottom portion of quesadilla. Top with rice, nacho cheese sauce, and sour cream. Roll up burrito, folding in the sides.

Yes, you’ll just need to make a few swaps:

  • Cheese – Use your favorite shredded cheese alternative that melts well.
  • Nacho cheese sauce – Use your favorite non-dairy nacho cheese or nut-based nacho cheese sauce instead.
  • Sour cream – Use your favorite non-dairy sour cream, skip completely, or swap it for some vegan ranch!

How can I lighten this up?

This is a super filling meal – partially just because of the size! So here are a few options if you want a smaller version:

  • Use one tortilla – Not totally the same experience, just just as tasty. Follow directions exactly except when you’re making the quesadilla portion, leave off the top tortilla.
  • Use smaller tortillas – This is an option, but you also have to be careful to not go TOO small or you won’t be able to add any of the fillings.
  • Cut in half – Share this messy burrito!
  • Ditch some of it if necessary – I don’t like wasting food either, but something I learned through Intuitive Eating is that sometimes food is either going to be wasted in the garbage or wasted in your body.
